'Magic' Somerset Mushrooms
Our Somerset Mushrooms are not only our most decadent recipe… they are also a “powerhouse of nutrition”!
We use a mix of foraged wild mushrooms and cultivated chestnut mushrooms in this recipe. Picked at peak condition, when they are bursting with flavour and packed with nutrients. Sott’Olio is a traditional Italian technique that locks in flavour and preserves the ingredients 'under the oil’. Using only the finest polyphenol-packed extra virgin olive oil, white wine vinegar, coriander seeds, salt and black pepper - we create a luxurious and deeply complex umami experience all in one jar.

Professor of Genetic Epidemiology, celebrated author and Cultjar collaborator Tim Spector recently published a fascinating article and podcast titled ‘The “Longevity Vitamin” - Why Mushrooms Deserve a Permanent Spot on Your Plate’. A captivating exploration into the tremendous hidden health benefits of mushrooms… especially when cooked, dried or preserved (like in our recipe)!
Tim says: “When you cook or dry a mushroom, you remove the water and are left with a powerhouse of nutrition: a full range of B vitamins, a surprising amount of protein, and essential minerals like selenium. They are also one of the few non-animal sources of Vitamin D; in fact, a single serving can provide about a quarter of your daily requirement.”
Interesting! And I bet you didn’t know that mushrooms are “genetically closer to humans than they are to plants” - making their nutritional profile “entirely unique”. It’s no wonder that our Mushroom Sott’Olio is one of our most desirable recipes.

Given the rich, silky and nutty taste profile of this recipe, it is perfect when paired simply. Mix through pasta or risotto, drop onto ricotta-laden toast or on top of a velvety soup.
