SPRING IS HERE!
Rhubarb in Honey is back!
Everyone seems to have been very excited recently with the season for Yorkshire Forced Rhubarb in full swing! Chefs and home cooks alike have gone 'rhubarb crazy' with recipes for rhubarb cakes, crumbles, tarts and even salads popping up everywhere!
As you know, here at Worminster Farm we love British produce, and Yorkshire rhubarb is no exception! Our CULTJAR chefs have been busy carefully sourcing the best seasonal ingredients, preparing and patiently waiting for our own delicious and unique rhubarb ferment recipe to be ready for you to enjoy!
Our wonderful 3 ingredient recipe is simple, unique and delicious!

Our Ingredients
Yorkshire Rhubarb, Somerset Honey, Garden Rosemary.
We source the absolute best Forced Rhubarb from the Rhubarb Triangle in West Yorkshire. Like other vegetables, rhubarb can be enhanced when fermented. This recipe has been developed In partnership with Blackbee Honey, located just a few miles away from us. The rosemary used for all CULTJAR recipes is picked straight from the kitchen garden here at Worminster Farm.
The Taste
Fermentation softens the rhubarb without the need to cook the ingredient, and, at the same time, it releases its own flavour, creating a rhubarb-infused honey. You can sieve out the mellow-sweet rhubarb or just enjoy a thinner fragrant honey.
It's lovely with yoghurt and granola for breakfast, with shortbread and cream for a simple dessert, as a topping for a good quality vanilla ice cream, or at the bottom of a glass of sparkling wine/elderflower pressé. We also enjoy it with Westcombe Dairy ricotta and even with some oily fish like mackerel.

With the wonderful weather we've been having recently, ice cream seems like a very good idea! Our neighbours over at Brickell's Ice Cream produce a delicious range of traditional French custard-style ice cream with no stabilisers, emulsifiers, preservatives or artificial flavourings! All natural, made using local milk and cream.
We are big fans of Brickell's and think their Vanilla Bean ice cream would make the perfect pairing to our Rhubarb in Honey recipe. Give it a try!
