Launching on Sunday 8 November: Badger Flame Beetroot Ferment - Natoora Collaboration
Badger Flame Beetroot Ferment
Badger Flame Beetroot (51%), white cabbage, apple, white onion, salt, horseradish, dill seed.
The Badger Flame Beetroots used in this recipe come exclusively from Natoora's Farms, so you know there's been no compromise. With every jar, 20p goes to Natoora's Farm Fund, helping raise up the next generation of farmers. www.natoora.com
Badger Flame beets have a sweet, buttery flavour with very little of the heavy earthiness found in standard red beets. Because of their mild, sweet nature, they can be enjoyed with a wide range of foods. This recipe also includes some Nordic-style seasonings, which make it the perfect accompaniment for Smørrebrød (Danish open-faced sandwiches) with smoked or pickled fish, roast beef or rich charcuterie, or perhaps (just) the BFB Ferment. The light tang and sourness introduced during the fermentation mean that it also works well with creamy cheese especially on bread with lots of nuts and seeds. And, for a rich autumnal or wintery meal, serve alongside wild meats, like venison - which benefits from the background mouthwarming feel of the horseradish and the clean, grassy notes of the dill, combined with the sweetness of the beets.
