Since day one, CULTJAR has been about rediscovering fermentation and preservation—not just for their health benefits, but for the depth of flavour and resilience they help us build.
Our approach has always been flavour first. By working with freshly harvested vegetables at their peak, nutritional value follows naturally. For this collaboration, we wanted to add another layer—pairing our craft with trusted nutritional expertise, without ever compromising on taste.

 
Eve Kalinik—accredited nutritional therapist, psychologist and specialist in gut health and the gut–brain connection—was a natural partner. Together, we created three recipes: two ferments and one gently preserved sauce, all designed for comfort, balance and ease of use.

Why Fermentation Matters in Winter

Preserving vegetables captures them at their nutritional peak, helping retain vitamins, minerals and antioxidants that support energy, immunity and overall wellbeing through the colder months. Fermentation also naturally produces beneficial microbes that may support digestion and gut health—while preserving vibrant seasonal flavour and reducing food waste.

Fermented vegetables can support the gut microbiome by introducing beneficial bacteria that may aid digestion, improve nutrient absorption and support immune function. Fermentation can also enhance the bioavailability of certain vitamins—making nutrients easier for the body to access.

Beetroot & Red Onion Ferment

Uplifting in both colour and flavour. Beetroot delivers fibre and antioxidants that support gut health, while red onion provides essential prebiotics. Fennel, cinnamon and nigella seeds contribute digestive and antioxidant benefits.

Spiced Cauliflower Ferment

A warming, gently spiced ferment. Cauliflower provides fibre and antioxidants linked to gut and immune health, while turmeric, garlic and whole spices bring natural anti-inflammatory properties. Red onion adds prebiotic potential to nourish beneficial gut bacteria.

Apple, Ginger & Cardamom Sauce

Comforting and gently spiced. Apples offer fibre and polyphenols that support digestion, balanced with ginger and cardamom for their digestive and anti-inflammatory qualities, and a touch of honey for natural sweetness.
