Curtido
Curtido is a fat-free fermented slaw / relish or condiment that is typical of Salvadoran cuisine. You could say that it is Central America’s version of kimchi or sauerkraut. It’s often served with corn cakes together salsa roja, with enchiladas or tacos or sometimes just served as a salad on its own. The lime and oregano in this recipe immediately transport you to Central America. We like to serve it alongside roast or pulled pork, especially when it’s in a wrap. A small amount added to a shakshuka gives extra freshness. And, due to the smoked chipotle included in the recipe it also partners with any barbequed foods.

The curtido has a great balance of flavours. We love the heat and sharpness. I will happily each spoonfuls of it straight from the jar. Quite addictive!

A jar full or delight. We have a spoonful with almost anything. Try with scrambled egg, I promise it’s fabulous.
