The term ‘umami’ is a loanword from Japanese which roughly translates to ‘pleasant savoury taste’. It was first coined by Japanese chemist Kikunae Ikeda, who noticed that kombu seaweed added an extra layer of deliciousness to dashi stock. Both kelp and dulse serve that role within this sustainable stock, amping up all the savoury flavours.
For a standard broth, dissolve 1 tsp (7.5g) per 500ml of freshly boiled water, or experiment to your heart’s content.
